orange champagne sorbet & watermelon mint agua fresca

For the past 10 months, I've been committed to CPC's women's small group. Every lady has been a TREMENDOUS blessing to me!!! I sincerely appreciate the insightful discussions, accountability, & encouragement shared with them. We always start off with a meal (breaking bread/fellowship) & its given me the opportunity to experiment with various recipes! Today, I was in charge of dessert & drinks... btw, E unni's kim chi jji gae was deeeericious* thank you!! =)



Champagne Orange Sorbet (...kind of hahah)


Ingredients:
3/4 cup sugar
1 cup chilled champagne (I just got a moscato)
2 tbps strained fresh OJ
1 large egg white
blueberries & raspberries for garnishing


In saucepan, combine sugar & 3/4 cup water. 


Bring mixture to simmer over moderate heat. stir & let simmer for ~10 mins.
Cool and chill syrup ~2 hrs (or until cold).


Cut oranges ~1/5 (to form your pimp cup!)


Now dig to China!


I hate jack-in-the-box toys & I hate popping champagne...
If & when a wuss (like me), call on a dependable male figure.


Strain to separate pulp from juice. 
Then add OJ, champagne, and 1 cup of chilled syrup. 
Freeze mixture until frozen but still soft.


As sorbet is freezing, do the dishes!!
My mild case of OCD prevents me from working in a dirty office/kitchen! =P


Separate egg white.


Beat until frothy, add to sorbet, and freeze until firm.


I used a toothpick to hold the berries together.


Call me MacGyver! 
I found tea candles to be perfect for punching out holes.


Sadly, I had to cheat.... lol!
Everything looked good, but my sorbet didn't freeze in time for SG.
So..... I sadly admitted defeat & bought some from the store....

I'll try to follow up on how the actual champagne orange sorbet tasted...




Watermelon Mint Agua Fresca



Ingredients:
4 cups watermelon
1/2 cup water
8 mint leaves
8 tbsps sugar (add to taste)
1 lime (half thinly sliced & half to squeeze)



Puree watermelon, water, leaves, and sugar.
Strain out seeds.
Squeeze in half a lime & throw in thinly sliced pieces for presentation.


Easy peasy!!!

  5. hahaha!! it was a bust~ the consistency wasn't right & I felt a lil buzzed! I think the recipe called for too much champagne~ lol

    Well, if there's no room for error, there's no room for growth! I'll attack it again sometime in the future... maybe with an ice cream maker?!
